The Sano series has inherited the tradition of the Japanese sword maker "Sengo Muramasa" in the blade shapes used. You will find the different blades essential for cooking (Gyuto, Santoku, Nakiri, Office ...).
The core is made of VG10 stainless steel manufactured by the Japanese steelmaker Tafeku. It is a steel with a high carbon content, for a stainless steel (more than 1%, i.e. 0.5% more than standard steel), as well as a high Cobalt content. It has a higher hardness of 61 +/- 1 on the Rockwell scale. This alloy has revolutionized the world of cutting because blades made of this steel have all the attributes sought after in cutlery :
